Zucchini Marmalade #LMDConnector

Perfect for harvest season! Use up some of the zucchini from your garden and make this lovely zucchini marmalade. Pairs nicely with piping hot, fresh, homemade biscuits, buns, or bread.
Recipe type: jam
  • 4 cups zucchini shredded, grated, or put in the food processor (with peel on)
  • 1 orange with peel on
  • 5 cups sugar (my MIL said 6, but I reduced it by 1 cup. Trying to find alternative sweetener or a way to reduce the amount of sugar added)
  1. Wash/clean zucchini. In a food processor, chop up zucchini. I actually just grate the zucchini with a box grater.
  2. Wash orange, cut into segments and remove seeds. Chop up orange with peel in food processor.
  3. In a saucepan, add zucchini, orange, and sugar. Boil for 10-15 minutes, let thicken. Mine didn't look like it was going to set, but it did eventually.
  4. Spoon or ladle marmalade in jelly jars/mason jars.
My Mother-in-law doesn't use pectin, Certo, gelatin or JELLO in her recipe. I suppose if you wanted to, you could. I found that the marmalade did thicken and set after a while, so I didn't need any of the above added to the marmalade.
