Clinging to the Remains of Summer Sandwich

Quick, easy, delicious way to enjoy leftover meat from that roast beef dinner (or in this case, Manitoulin Shawarma)! Use up some of those veggies from your garden too!
Serves: 6
  • 1 lb beef (cooked leftovers - in this case, Manitoulin Shawarma was used, but you can also use leftover roast beef)
  • 1 medium zucchini, sliced
  • 1 red onion, sliced
  • 1 medium tomato, sliced
  • 6 hamburger buns
  • olive oil (to drizzle over zucchini before grilling)
  • salt & pepper, to taste
  1. Wash and slice zucchini and tomato. Peel and slice onion.
  2. Drizzle olive oil over zucchini slices and grill on BBQ.
  3. You can warm up your leftover beef or serve it cold if you wish. Take hamburger bun and on bottom half, layer beef, grilled zucchini, tomato, and onion. Add a dash of s & p if you wish. Assemble sandwich and enjoy.
