Fudgy Chocolate Crinkle Cookies

These slightly crisp on the outside and fudgy on the inside cookie is a hit with friends, family, and everyone who tries them!
Recipe type: Cookie
Serves: 20 cookies
  • 1 cup all purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup white granulated sugar
  • ¼ cup vegetable or canola oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup confectioner's sugar (to roll the cookie dough in)
  1. Preheat oven to 350°F. In a medium-sized bowl, mix together the cocoa powder, white sugar and vegetable oil. Beat in eggs one at a time and mix until fully incorporated. Add the vanilla and mix.
  2. In separate bowl, sift the flour, baking powder, and salt. Stir the dry ingredients into the wet mixture just until you form a nice consistency dough.
  3. Line 2 cookie sheets with parchment paper or a silpat mat. Using a cookie scoop (for consistency in sizing), scoop out 1 tablespoonful of dough. Roll the dough into balls.
  4. Add the confectioners sugar to a smaller bowl. Evenly coat each ball of dough in confectioners' sugar and place onto your prepared cookie sheets.
  5. Bake in preheated oven for 10 minutes.
These cookies will come out of the oven really soft, but will harden up as they cool.

Make sure to allow the cookies to cool on the cookie sheet for at least 5 minutes before transferring to wire racks to cool.
