Little One's Chili con Carne Recipe

Easy Chili con Carne recipe. Hearty comfort food that you can make with ingredients you probably already have in your kitchen.

  • 2 lbs ground beef
  • 1 can dice tomatoes, 796 mL
  • 1 can whole kernel corn, 540 mL
  • 1 can kidney beans, 540 mL
  • 1 can black beans, 540 mL
  • 1 medium onion, diced
  • 2-3 cloves garlic, minced
  • 3 Tbs dehydrated vegetables *optional
  • 2 Tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • ⅛ tsp cayenne pepper
  • ¼ tsp cinnamon
  • salt & pepper to taste
  • oil to saute onions, garlic and spices
  1. Cook beef in a Dutch oven with a little oil until browned (no pink showing).
  2. Add onions and garlic, and saute. Add spices and dehydrated veggies (if you're using them). Let cook together for 2 minutes.
  3. Add tomatoes, kidney beans, corn, and black beans. Bring to a boil. Reduce heat, cover, and let simmer for at least 1 hour.
  4. Enjoy!
We didn't have our usual diced tomatoes on hand, so we used whole tomatoes. If you use whole tomatoes, just go ahead and crush them a bit.

Little One likes to add a bay leaf in her chili recipe. If you do, don't forget to remove the bay leaf. Don't eat it!
