Lemon Strawberry Galettte

For those who love all things lemon, this is a light and refreshing treat. A lovely way to end a dinner with friends and family. My 10 year old has named this "the giant lemon danish you can share with your friends".

Serves: 12
  • 1 package of Tenderflake puff pastry (contains 2 squares of puff pastry)
  • 6-8 strawberries, sliced
  • ½ cup FRESH lemon juice (not bottled), about 1-2 lemons (depending on size)
  • ½ c granulated sugar
  • 4 egg yolks
  • 6 Tbsp butter, cut into cubes
  • 2 tsp freshly grated lemon zest (optional)
  • turbinado sugar for sprinkling on pastry

  1. In a heavy saucepan, whisk lemon juice, lemon zest, sugar and egg yolks.
  2. Stir in cubed butter and cook over low, whisking frequently until curd thickens. About 6 minutes or until first sign of bubbling. Do not overcook. Set aside.
  3. On a lightly floured surface, roll out puff pastry. I rolled each square to about ¼ inch thickness and overlapped them. Place onto parchment lined baking sheet.
  4. Add a generous layer of your lemon curd in the middle, ensuring that you have at least 3 inches overlap.
  5. Arrange strawberry slices in a circular pattern, layering each row. Fold over pastry making a lip so your filling doesn't fall out of the sides.
  6. With a basting brush, cover pastry with egg wash and sprinkle turbinado sugar onto pastry.
  7. In a 400 degree preheated oven, bake for 20 minutes.
