Mini Chocolate Chess Pies

Rich, decadent, silky smooth chocolate pie. A family favourite!

Ingredients
  • 3 eggs
  • 1 sm. can evaporated milk
  • 3 tbsp. cocoa
  • 1 tsp. vanilla
  • 1½ c. sugar
  • 4 tablespoons Gay Lea butter
  • 20 unbaked tart shells or pie pastry for a double crust pie that you will cut out for a 20 tarts (your favourite homemade pastry recipe or store-bought/pre-made). I usually make my own pie crust, but for this recipe, I used store-bought.
Instructions
  1. BE SURE TO MIX AS FOLLOWS:
  2. Preheat oven to 375 degrees.
  3. Beat eggs.
  4. Add 1 cup sugar and then add milk. Mix well.
  5. Mix cocoa with other ½ cup sugar.
  6. Add to egg mixture and mix well.
  7. Melt butter and mix with above. Add vanilla.
  8. Pour in unbaked tart shells, about ¾ full.
  9. Bake at 375 degrees for 15 minutes.
  10. Let cool until the chocolate filling has set.
Notes
The chocolate filling should be ooey gooey, kind of like pudding crossed with a super moist brownie. Make sure not to overcook the pie.
