Light, quick, easy, healthy soup that you'll want to make time and time again.
Cuisine: Japanese
  • 4 cups water
  • ⅓ cup firm tofu, cubed
  • 4 tbsp white miso paste
  • ½ cup green onion, chopped + some reserved green onion to garnish
  • 3 oz of enoki mushrooms, trimmed
  1. In a medium pot, add water and bring to low simmer.
  2. In a small bowl, add miso paste and mix in a bit of hot water and whisk well. I usually use a chopstick to do this.
  3. Add the miso and hot water mixture into the pot of hot water and stir to ensure there are no miso paste clumps.
  4. Add tofu cubes, enoki mushrooms and green onion. Cook for 5 minutes.
  5. Serve in soup bowls , garnish with extra chopped green onions and enjoy!
