It’s December and that means it’s time for me to bake batches and batches of Fudgy Chocolate Crinkle Cookies! December is the month when I bake up a storm in the kitchen. I get all my Christmas baking done and the house smells like cookies for weeks!

Each year, as a little thank you, I bake cookies for our Canada Post mail carrier and our other delivery service friends. The usual holiday cookies I include along with the Fudgy Chocolate Crinkle Cookies are shortbread cookies, gingersnap cookies, sugar cookies, and a few others.
I’m not sure why I only make these during the holidays or what constitutes being considered a Christmas cookie, but these always make their appearance this time of the year. Perhaps the snowy white look from the icing sugar makes them feel a bit festive? In any case, here they are!

- 1 cup all purpose flour
- ½ cup unsweetened cocoa powder
- 1 cup white granulated sugar
- ¼ cup vegetable or canola oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp salt
- ¼ cup confectioner's sugar (to roll the cookie dough in)
- Preheat oven to 350°F. In a medium-sized bowl, mix together the cocoa powder, white sugar and vegetable oil. Beat in eggs one at a time and mix until fully incorporated. Add the vanilla and mix.
- In separate bowl, sift the flour, baking powder, and salt. Stir the dry ingredients into the wet mixture just until you form a nice consistency dough.
- Line 2 cookie sheets with parchment paper or a silpat mat. Using a cookie scoop (for consistency in sizing), scoop out 1 tablespoonful of dough. Roll the dough into balls.
- Add the confectioners sugar to a smaller bowl. Evenly coat each ball of dough in confectioners' sugar and place onto your prepared cookie sheets.
- Bake in preheated oven for 10 minutes.
Make sure to allow the cookies to cool on the cookie sheet for at least 5 minutes before transferring to wire racks to cool.
Enjoy!
These cookies don’t last long, since they tend to get eaten almost immediately! I recommend making a few batches!
