I know. Lunch Box Chicken & Waffles? Say what?

I recently wrote a post about Mom Wins — those tiny victories in a mom’s every day life like seeing your kid consume the recommended servings of water in a day or seeing your child reach for veggies for a snack. Those little Mom Wins make my day. They really do.
Another Mom Win to me is not having to make school lunches! I often think of the old saying, “Teach a man to fish and he will never go hungry” and it reminds me that if you teach your kids to make their own school lunches, you will never have to make school lunches again.
Back to Little One’s Lunchbox Chicken & Waffles…
My kid came up with the idea of Lunch Box Chicken & Waffles. For a nine year old, she surprises everyone with her choice of food. A friend took us out for lunch and he was surprised when Little One ordered liver and onions. I know. Right?! He told me he was 100% sure she would have ordered chicken fingers and fries, as that is what he said all the kids he knows usually order!
Known to stray from the standard sandwich, Little One is more of a “go big or go home” kid and loves to combine her favourite flavours, textures, and ingredients. Often when she makes her lunches, she enjoys sweet and savoury, with some crunch in there.
Little One concocted her version of chicken and waffles, because A) we have been making waffles and pancakes a lot lately and B) she really likes Maple Lodge Oven Roasted Chicken.
