Hey, everyone! Lisa here from Fabulous Habits. Today, I am thrilled to share one of my easy-peasy summer salads on the Life on Manitoulin blog.
Now that our family’s moved to a new condo, I have found myself hosting more often than usual. Perhaps it’s the warm summer days that are encouraging me to invite friends over for a dinner party (or two). And you know what? I wouldn’t have it any other way!
Recently, my two best friends (who are also godparents to my son), paid a visit and we longed for something fresh. We’ve been experiencing huge heat waves as of late, so I’ve been cooking and prepping meals on the lighter side.
My Spinach Salad with Strawberries, Cucumber, and Candied Walnuts is my go-to for a quick starter. This salad is especially wonderful during strawberry season. There’s just something about fresh fruit in a bedful of greens… so refreshing and so juicy. For added texture, the candied walnuts and cucumber offer the perfect crunch.
Spinach Salad with Strawberries, Cucumber, and Candied Walnuts
¼ cup brown sugar, packed
4 tbsp butter
2 cups walnuts
4-5 cups baby spinach
2 cups strawberries, sliced
½ cucumber, sliced
Your favorite raspberry vinaigrette
Line a baking sheet with parchment paper and set aside. On a non-stick pan, start heating sugar and butter over medium heat. Once they start to melt, add walnuts.
Mix your walnuts, butter, and sugar regularly to ensure that the walnuts get properly coated.
Once everything is melted onto the walnuts, pour them onto your lined baking sheet. Separate the walnuts so they don’t stick with one another. Allow to cool.
In a large bowl, toss spinach, strawberries, cucumber, and vinaigrette. Top with your candied
walnuts and enjoy the freshness!
