I married a beef farmer. He loves his meat and potatoes. He really loves his meat and potatoes. This means I’ve got to pull out all my favourite potato recipes, as well as be on the look out for new recipes to try! I have been seeing Hasselback Potatoes on all of my social media networks. In fact, I’d be pretty hard pressed to go online and not come across photos and recipes for Hasselback Potatoes!
I’ve tried a version of Hasselback Potatoes at an event I attended a few months ago. I was blown away by all the flavour. The version I had included a lovely strong, aged cheddar in between the slices, and a mixture of herbs. I figured I’d try make my own version of Hasselback Potatoes with what we had in our garden and in my fridge and kitchen pantry.
Hasselback Potatoes
Ingredients
6 to 8 medium potatoes, washed and scrubbed. Leave skin on.
3 – 4 tbs softened butter
1/4 c olive oil
4 cloves garlic, minced
Himalayan pink sea salt
Fresh ground pepper
Fresh chives or parsley to garnish
* Optional: Grated cheese of your choice, in between potato slices
Instructions
Preheat oven to 400 degress F.
Prepare your potatoes (wash and scrub them).
Slice potato thinly (1/4 inch thickness), make sure to NOT cut all the way through to the bottom.
In a small mixing bowl, add butter, olive oil, minced garlic, salt, and black pepper. Mix well.
Brush mixture in between each potato slice. Make sure to get in between each slice. When the potatoes cook, they will “fan” out and you want that yummy goodness in between each slice!
Bake in 400 degree oven for 50-60 minutes.
Remove from oven, garnish with chopped chives or green onion. Enjoy!
*You can easily switch up this basic recipe by using different herbs of your choice or by inserting your favourite cheese in between each slice.
