Super Easy Greek Pita Pockets made by a 7 year old?
I can hardly believe that Summer is almost over! Say it ain’t so! It feels like I just blinked and it’s almost time for back to school!
I won’t lie. The thought of back to school has me thinking of school lunches! I asked Little One to come up with some ideas for lunches, as she isn’t really a sandwich kind of kid. She loves pasta, stir-fry, and leftover shepherd’s pie, roast, or chili! She did come up with a sandwich she likes though. Super Easy Greek Pita Pockets!
Little One’s Super Easy Greek Pita Pockets
- Pita bread (cut in halves)
- Thinly sliced beef (to be quick, you can even use roast beef from your local deli)
- Sweet red pepper, diced
- Cucumber, sliced thinly
- Onion, sliced thinly
- Lettuce, chopped
- Summer Fresh Tzatziki
- Open up pita pocket and spread layer of Summer Fresh Tzatziki inside.
- Layer lettuce, cucumber, onion, red pepper and beef. Wrap and secure with a toothpick or wrap in foil and twist at base to secure. Presto! Lunch is ready!

Honestly, I asked her what ingredients we required for her creation, and she listed all of the above ingredients. She loves cucumber, onion, red pepper, and tzatziki. In fact, Little One loves tzatkiki so much that she will eat it directly out of the container if we let her!
Simply put ingredients on counter for the kids to assemble themselves and let them create! With Little One, I’ve found that if she comes up with the idea and if she plays an active role in prepping, cooking and assembling meals, the more apt she is to eat everything on her plate. Trust me…the kid can eat despite the fact that she only just hit the 40 lb mark!
Little One’s golden rule in the kitchen? Eat a rainbow!

In case you were wondering why Little One calls these her Super Easy Greek Pita Pockets, it’s because of the Tzatziki! She associates all Greek food with Tzatziki! She is so funny. She said she would love to take chicken souvlaki for lunch too.

Little One used Tzatziki, but you can use any of the Summer Fresh Kid Friendly Hummus/Dips: Original Hummus, Sweet Potato Hummus, Avocado Hummus, Roasted Red Pepper Hummus, Caramelized Onion Hummus, 5 Cheese Dip, Tzatziki.
Little One wanted me to add this photo of her fruit! She said we needed to add fruits to her lunch.

I have to tell you that the Hummus Cucumber Avocado Sandwich is one of my all time favourites! I could live on those (and, I did when I was vegetarian in my teens to mid-twenties)! We also can’t get enough of the Roasted Red Pepper Hummus & Grilled Vegetable Sandwich.

I mentioned that my kid is not much of a sandwich lover, but she will take those sandwiches in her lunchbox!
Parents, you’re busy and in need of something tasty (and healthy) to feed the kids! Trust me, these Super Easy Greek Pita Pockets are so easy and take up practically no time to make! If my 7 year old can make them, anyone can make them!

We’ve been eating pita pockets for years and still love them today! There are so many options for fillings!
I think my fussy eater would absolutely love these. It’s really difficult to get her to eat different things.. but, sometimes I make something she’s not seen or had before and she’ll dive right in..then that’s all she wants to eat for the next week lol
