By now most children are back to school and it’s time to start thinking of healthy snacks and lunch ideas.
There’s nothing quite like the freshness of thick slices of just-picked tomato, some avocado, cucumber, arugula, red onion, sprouts and garlicky hummus on toasted pumpernickel bread! That is my absolute favourite sandwich!
I am not kidding when I say that this is my absolute favourite sandwich! I’ve been known to go for days (and even weeks) of having this for lunch because I love it so much! My husband laughs because generally, I’m not much of a sandwich eater, but when it’s loaded with lots of fresh veggies and my favourite Summer Fresh hummus or dips, I just can’t get enough. We’ve always got Summer Fresh Garlic Hummus, Baba Ghanouj, Artichoke Asiago, Spinach, Tzatziki and Roasted Red Pepper Hummus in our fridge. Perfect, because Summer Fresh has shared some incredibly delicious and healthy back-to-school sandwiches!
I just noticed that my ultimate sandwich is quite similar to the Summer Fresh Roasted Garlic Hummus Vegetarian Mix Sandwich! I thought I was being original. Great minds think alike, I guess?
Christine’s Ultimate Sandwich
Ingredients:
- Summer Fresh Roasted Garlic Hummus
- Sliced pumpernickel bread
- Sliced tomato
- Sliced cucumber
- Sliced red onion
- Sliced avocado
- Arugula (or mixed greens)
- Sprouts of your choosing (alfalfa, mung bean, lentil, etc)
