For the holidays, we usually stick to our mainstays, but I thought I’d include this festive Persimon®, Blueberry and Pomegranate Salad this year. How gorgeous is that? I found the recipe on the persimonsays.com website.
How gorgeous is this Persimon®, Blueberry and Pomegranate Salad?
The flavours are so lovely and delicate. The salad was a total hit with everyone. For those who had never tried persimmon before, this was a pleasant surprise!
With the ruby red pomegranate seeds and the chopped fresh mint, this is a very festive salad.
Persimon®, Blueberry and Pomegranate Salad
1 cup (250 mL) blueberries
½ cup (125 mL) pomegranate seeds
1 tbsp (15 mL) lemon juice
2 tbsp (30 mL) fresh mint, roughly chopped
2 tbsp (30 mL) liquid honey
1 cup (250 mL) Greek yogurt
Place the Persimon® slices, blueberries and pomegranate seeds in a large serving bowl. Drizzle with lemon juice and honey. Sprinkle with mint.
Serve with a generous dollop of yogurt.
Makes 4 servings

I’ll be honest. I never tried persimmon until I was in my twenties.
The fruit is native to both my parents’ home countries, but for some reason, it wasn’t something we ate in our home. I tried persimmon for the first time when I was living and teaching in Japan. In Japan, I knew the fruit by the name ‘kaki’, and only when I returned to Canada did I discover (thanks to Martha Stewart’s TV show) that kaki is called persimmon in English!
