With the weather finally feeling like Summer is just around the corner, it’s time for some lighter meals. Thankfully, my family is a salad family. Yes, even my husband and 5 year old daughter love their salads! Spinach salad, mixed greens, kale…they love it all. I try to change things up often for variety. One of our favourite salads is a simple and easy fruit salad.
When Hubby and I were still dating, his mom made this awesome salad with ingredients I would never have thought to put together!! It’s nice and light, tasty, filling, and good for you! I really love this fruity cottage cheese salad at breakfast with a slice of crusty French bread and my morning tea!
Pineapple-Green Grape Cottage Cheese Salad
Ingredients:
- 250 g Gay Lea cottage cheese (I use Nordica 2%)
- 1/2 c. seedless green grapes; halved
- 1 can bite sized pineapple; drained (save and use juice for something else–waste not want not!)
- 2 tbsp sunflower seeds
Blend first three ingredients together. Sprinkle sunflower seeds on top.
This is a very yummy salad. You can sweeten the mixture with a natural sugar replacement like coconut sugar, maple syrup or honey. I personally don’t add any sweetener or sugar because I don’t feel the recipe needs it.
Cottage cheese is protein rich, a good source of calcium, and can be enjoyed by anyone anytime of the day; it’s an excellent component of a healthy diet. There are so many ways to enjoy Cottage Cheese right from the container as a quick snack, or at breakfast or lunch on top of fruit, a bagel or salad.

I love to have cottage cheese with fruit and I put it in lasagna
I love to mix cottage cheese with jam for a yummy dessert.
We always use in it lasagna but I also just like mixing it with some fresh pinepple
So many recipes we can make with cottage cheese, but my favourites are with fruits! Love this recipe. Just pinned it!

I love cottage cheese in lasagna, but my favourite way to eat cottage cheese isn’t a recipe – just add a bit of raspberry jam.
I like to eat it sprinkle with black pepper or make lasagna with it.
I like eating cottage cheese plain.
Oh my gosh Christine, this seriously sounds good! I have never been a real fan of cottage cheese on its own, but I like it in stuff. I have always wished I could start eating and enjoying it though because it is so good for you. I am really interested in this recipe. I think the pineapple and grapes will add in enough sweetness to ramp up the cottage cheese. I am going to get some this weekend and give it a go! Thanks for the great idea..
I don’t often eat or bake or cook with cheese (hubby doesn’t like cheese) so my fav way is either with fruit on top or on top of a salad or in a nice cheesy pasta dish

Oh this looks great! My fave cottage cheese recipe is a simple fruit salad my mom used to make; fresh fruit around a scoop of cottage cheese. Delish!

I love to add it to a salad. Usually one with couscous, sunflower seeds and everything but the kitchen sink.

I like to make breakfast puffs its egg, cottage cheese, cheddar, mushroom and onions (my son likes me to add bacon or sausage in his) with flour etc and bake them up
