Weekday mornings are a zoo in our house, as I’m sure it is for everyone else. Though I give Little One a wholesome breakfast every day, we really look forward to weekend breakfasts where we can have a leisurely meal as a family to start our day off. Sundays are our special brunch days. Little One looks forward to Sunday Brunch because I try to do something fun each time. Some family favourites are Maple Bacon Waffles (with maple syrup from our farm), a Spanish Frittata and, of course, the Wife Saver!
I saw this cute pancake idea from Bento USA and thought I’d give it a try. I didn’t have a Bento Essential Deluxe Sauce Pan Cake Drawing Pen, so I tried free-handing with the tip of a chopstick dipped in pancake batter. I drew Hello Kitty and wrote “I love you” on the heated pan and then added pancake batter over. It didn’t turn out the way I wanted it to, so I’m not including photos. Needless to say, I’ve ordered the Bento Drawing Pens! With the rest of the batter, I made heart-shaped pancakes.

Easy Sunday Brunch Ideas
Zippy Eggs & Pancakes Made With Bran
Zippy Eggs
Ingredients:
- 6 eggs
- 1/4 c Thai Sweet Chili Sauce
- 1 Tbsp butter for cooking
Instructions:
- In a glass bowl, crack eggs and whisk until you end up with a pale yellow colour.
- Over medium heat, in a heavy frying pan, melt butter.
- Whisk eggs vigorously (sometimes I add milk, salt and pepper, but for this recipe it’s not necessary). Whisk as much air as possible into the eggs.
- Pour whisked eggs into the pan and let it cook a minute or two to let the bottom begin to set. With spatula, push edges toward the centre of pan. Repeat until eggs are cooked. Add Sweet Thai Chili Sauce while cooking eggs. We like a little extra kick and even add more to the finished product! We just drizzle the sauce over the eggs! Mmmm!
This amount serves our family of 3. Cook time: 5 to 6 minutes total.
Pancakes made with Bran
Ingredients:
- 1/2 c whole wheat flour
- 1/2 c all-purpose flour
- 1/2 c bran (oat bran)
- 1 egg
- 1 tsp baking powder
- 1 tbsp maple syrup
- 2 tbps melted butter
- 1 1/2 c milk
- pinch of salt
- butter for cooking pancakes
Instructions:
- Sift all dry ingredients together in a medium-sized bowl. Make a well in centre and pour in milk, egg, melted butter and maple syrup. Mix until smooth.
- In a heated lightly oiled frying pan, scoop batter onto pan, about 1/4 c for each pancake. I formed heart-shaped pancakes for fun, but you can just make simple round ones if you don’t want to get too fussy. I sometimes make Mickey Mouse pancakes for Little One too. Cook over medium heat – both sides golden brown.
I serve these with either our homemade maple syrup from our farm or a homemade berry compote made with local berries (we always have berries because I pick them in the Summer and freeze them for Winter use).
Note: The texture and consistency for these pancakes is a bit different from your standard all white flour pancakes. They’re a hit with my family and I like that there’s bran included for a bit of extra fibre. I also use the fabulous and inspiring Deb Lowther’s Oatmeal Pancakes to switch things up sometimes.

I love how you used bran in your pancakes. I have never thought of doing that. It’s a great sneaky way to get some bran into the kids. I think my husband would love your zippy eggs. This looks lovely. I’ve been making pancakes with stone ground organic whole wheat flour lately, and it’s lovely. Not the same as regular pancakes but as good, and they’re healthier.

The Zippy Eggs would probably not go over well with my gang except for my hubby who likes spice but the pancakes would be a big hit!
Heidi, your gang not a fan of a bit of spice? It’s sweet and tangy with a bit of heat. Not too spicy. This said, I know Little One’s friends will not touch zippy eggs. They go for the standard plain eggs or with melted cheese. The pancakes are a hit with everyone though!
