The apples on our apple trees are ripening. The weather has already started to change. Nights are cooler and there’s that feeling in the air that cannot be mistaken. Summer is almost over. There’s a hint of sadness as we will soon say goodbye to daily jaunts to the beach and all the freedom of Summer. Little One will soon begin Senior Kindergarten and we will all fall into our routines again.
This obviously means me packing school lunches and being more organized than I am in the Summer. This means earlier wake-ups for Little One (she’s not a morning person) and if life isn’t busy and hectic already, it’s about to get even more so!
In the meantime, I’m clinging to the remains of Summer and bracing myself for the busy back-to-school lifestyle we’ll adopt in but a few short weeks.
BBQs & Outdoor Dining for the Remains of Summer
Our Summers are super short, so you bet I’m going to make the most of the days we have for outdoor dining! This means firing up the BBQ and having meals on our patio!
If you’re looking for some inspiration when it comes to BBQ recipes, check out these great recipes over at Life Made Delicious. We like the Grilled Beer-Marinated Rump Roast and Grilled Chicken Salsa Verde (just to name a few)!
Here’s something quick I whipped up for lunch with the leftovers from the Manitoulin Shawarma I made for supper.

- 1 lb beef (cooked leftovers - in this case, Manitoulin Shawarma was used, but you can also use leftover roast beef)
- 1 medium zucchini, sliced
- 1 red onion, sliced
- 1 medium tomato, sliced
- 6 hamburger buns
- olive oil (to drizzle over zucchini before grilling)
- salt & pepper, to taste
- Wash and slice zucchini and tomato. Peel and slice onion.
- Drizzle olive oil over zucchini slices and grill on BBQ.
- You can warm up your leftover beef or serve it cold if you wish. Take hamburger bun and on bottom half, layer beef, grilled zucchini, tomato, and onion. Add a dash of s & p if you wish. Assemble sandwich and enjoy.
This is how we enjoy a simple meal with leftovers and veggies from our garden. Ahhh! Summer, how we love thee!
The end of Summer signals the beginning of the new school year. My baby is going to be in Senior Kindergarten! How did that happen?!
Since school is about to start again, I’ll be enlisting the help of my trusted kitchen BFF — My slow cooker! This Slow Cooker Mediterranean Minestrone Casserole is something I’m adding to my “must-make” list. I’m always on the look out for fab new slow cooker recipes! We have our classic family favourites, but a little variety is the spice of life.
