One of the things I love the most about my 3 year old is that she will eat anything and everything I serve her. I love that she doesn’t think twice about eating a Tilapia or a bowl of curried lentil soup!
We just got hit with a pile of snow a few days ago. Though it’s a Winter wonderland and we’ve been having fun outdoors in the snow, there’s nothing like coming in to a nice bowl of hot soup!
Here’s my curried red lentil soup recipe.
Ingredients:
1 onion, diced
4 cloves of garlic, minced
1.5 inches of ginger root, grated
1 large carrot, diced
2 cups of red lentils
1 can diced tomato
1-2 Tbsp curry powder
1 Tbsp cumin
1 tsp oregano
black pepper (and if you want, salt to taste)
a little oil to sautee onions, garlic and “burn” the curry/make curry paste
1. In a large pot or Dutch oven, heat a bit of oil. Add curry powder and cumin and cook it for a bit (make a paste). Add onions and garlic, and sautee.
2. Add carrots, lentil, and diced tomato. Add seasonings (to your taste). Add 6 cups of water. Cook covered for an hour or more.
I bought some lentils in hopes of creating a dish safe for my gallbladder woes…and I had no idea what to do with the stuff 😉

Wow… I thought we got a lot of snow. My kids will generally eat whatever I put in front of them, but there are the occasional fights. I miss the days of serving anything and they ate!
